An introduction to the basic principles and instrumentation used in the biochemical analysis of food: Use of pH Meter, Centrifuge, Spectrophotometer, Rotary Flash Evaporator, So- nicator, HPLC, UPLC-MS/MS, GC-MS/MS and other common instruments Preparation of Reagents, Sampling & Extraction, Estimation of Nutritional Content and Antioxidants in food
