Training Programme on Analysis of Ghee as per FSSAI Parameters

ICAR-National Dairy Research
Institute, Karnal, is organizing a
specialized 5-day training program
on “Analysis of Ghee as per FSSAI
Parameters” for professionals,
researchers, and industry personnel.
The training aims to provide in-depth
theoretical and practical
knowledge of standard analytical
methods for evaluating ghee quality
as per FSSAI guidelines. Participants
will gain hands-on experience in key
tests such as Moisture, BR reading,
RM value, Polenske value, peroxide
value, Free Fatty Acid, Baudouin Test,
Iodine Value, Saponification value,
β-sitosterol detection by HPLC and
fatty acid composition by GLC.
Emphasis will be placed on ensuring
compliance with regulatory
standards for quality, safety, and
authenticity of ghee in the dairy
industry. The program is ideal for
food business operators, quality
control analysts, food technologists,
and laboratory personnel seeking skills in ghee testing.
